3 Eggs Custard


As a child I grew up eating steamed eggs. Granny used to have a few variations of this.
We could have minced pork in it, chopped chives and of course, salted eggs and century eggs too.
The custard is really smooth and just slides down your throat!

The salted eggs and century eggs give the dish texture and flavour

recipe:
2  duck century eggs, hard boiled
2 salted duck eggs, hard boiled
5 chicken eggs
Soy sauce, to serve

Prepare the steamer
Peel the salted eggs and century eggs.
Roughly chop them, leaving small and big chunks
Place all this in a round heatproff dish 
Beat the chicken eggs in a big measuring cup
Pour eggs into a big bowl
Now, measure twice the amount water  to eggs
The idea is to get 1 part eggs to 2 parts water
Add the water to the eggs
 Pour into the dish, over the chopped eggs
Steam under high heat for 20 minutes.
Serve with soy sauce.

Honeyed Chicken with Sesame Seeds


Chicken, Honey, Sesame Oil, they are a prefect match!
The results are irresistably scrumptious legs, you can't wait to dig in, making sure you get every bit of sauce on the bones and on the plate
Literally finger lickin' good

recipe:
8 chicken drumsticks
1 tablespoon sesame oil
2 teaspoons salt
3 tablespoons hoisin sauce
4 tablespoons honey
1 tablespoon sesame seeds

Toss the chicken with salt and hoisin sauce
Place in the dish, cover and leave to marinade in the fridge for 2 hours
Preheat fanforced oven to 180C
Bake the chicken for 40 minutes
(check it now and then, covering it with foil if it gets too brown)
Microwave the honey in a small bowl to make it more liquid
Open the oven door and quickly brush the honey all over the chicken
Bake for another 10 minutes
Remove from oven
Sprinkle with sesame seeds. Serve!

Chocolate Beetroot Cake


The other day I bought a beetroot thinking that I could make some healthy juice..
Obviously didn't happen.
I came across this chocolate beetroot cake instead
And it's pretty unique I must say..The beetroot gives that warm earthy flavour, it keeps the cake really moist and still quite healthy =)
The great thing is, everything goes into the food processor
The hardest part is grating the beetroot..blehh pink hands

recipe:
175g flour
1 teaspoon baking soda
50g cocoa powder
70g dark chocolate, melted
150g brown sugar
pinch of salt
handful of chopped nuts
180ml oil
2 tablespoons sour cream or yoghurt
3 eggs
dash of vanilla
300g grated beetroot

Preheat oven to 180C
Blend everything in a food processor until smooth
Pour into a greased 9 inch tin 
Bake for 60 minutes.




Peanut Sambal Chicken


This chicken dish will get people asking for the recipe after eating it =)
It's almost like a satay sauce but just not as sweet and it's way more easy..
In the recipe below, I mentioned that I've browned the chicken first. But that's optional..However, browning it not only adds flavour, but also helps the chicken to hold it's shape better while cooking.

recipe:
20 red chillies
4 cloves of garlic
2 medium sized red onions
1 stalk lemongrass
1 cup of roasted peanuts, chopped roughly

Cut the chicken into pieces
Blend chillies(with seeds), garlic and onions in a food processor
Heat a wok with some oil and brown the chicken pieces until golden brown.
Add in the blended mixture and cook until fragrant
Bruise the lemongrass with the back of a knife and add into pot.
Add enough water to barely cover the chicken
Season with salt
Simmer uncovered for about 45 minutes until the chicken is tender
Remove the chicken pieces from the pot and continue reducing the gravy until it's quite thick
Add the peanuts to the gravy.
Return the chicken to the gravy.
Serve!

Chocolate and Pear Pudding


I've used many of Nigella Lawson's recipes..most of them are extremely workable and fuss-free.
This one, however, I make quite often when I want a treat after a nice bath..You'll see what I mean soon enough!
 recipe:
1  large can of pears in syrup (about 10 halves)
100g flour
50g cocoa powder
150g room temperature butter
125g sugar
1 teaspoon baking soda
2 eggs
a dash of vanilla
2 tablespoons milk
1/2 a cup of baileys

Set oven to 200C
Arrange pear halves in a dish
Blitz the rest of the ingredients in a food processor until smooth
Spread the batter over the pears
Bake in the oven for 30 minutes
(enough time for a shower)
Remove the pudding from the oven and immediately pour (I free-pour) the baileys over the hot hot pud..
DIG IN

Fish, two ways


I came across "Angel Fish" in the market the other day..It's very similar to Pomfret, the kinds you normally get at a wedding dinner.
If you haven't got the time, try this method out..It's quick and simple even after a busy day..
Defrost the fish in the morning, that way it'll be oven ready by dinner time.


Preheat the oven to the highest temperature
Oil a dish with olive oil and a little sesame oil for more flavour
Place a bunch of your favourite herbs on the dish..I used mint, basil and kesom.
Rub the whole fish with salt and place it on the bed of herbs.
Top the fish with more herbs.
Drizzle a little oil on top
Next, pour a little white wine or fish stock into the dish
Place a piece of baking paper in contact to the fish (prevents sticking)
And cover the whole dish with foil
Cook in the oven for 15 minutes
Turn off the oven and leave the fish inside for another 10 minutes.
Serve with rice or if you're lazy like me, Just eat the fish like this..





Upside-Down Cakes


This one's an Apple Upside-down cake.
I decided not to show you the top because I did'nt really arrange it very nicely! haha
Nonetheless, the cake still tasted great!
It holds very well and it keeps very moist even when chilled, so its perfect for making ahead.
Another variation is Banana
(I personally prefer bananas to apples) Flavours are more intense
Yeah I know it doesn't look all that appetizing, but cutting it up and serving it on a pretty plate does the trick!
Here it is

i made it quite thin, so it's more of a slice..Perfect for tea time =)

recipe:
3 tablespoons sugar
50g butter
9 bananas, halved lengthwise
200g Flour
2 teaspoons baking soda
200g butter, room temperature
150g sugar
4 eggs
6 tablespoons milk

Heat oven to 180C
Line a 13 by 9 inch cake tin with baking paper
sprinkle on the 3 tablespoons of sugar
Drop small pieces of butter randomly over the sugar
Arrange banana slices on top
Place the Rest of the ingredients into a food processor and blitz until smooth and creamy
Spread over the bananas, smoothing and leveling the batter
Bake for about 30 minutes.
Cool completely before inverting the cake.
Peel off the baking paper.
Cut into squares and serve with cream or caramel sauce!

Sang Choy Bao


This is My take on "Sang Choy Bao"
Fresh and fragrant flavours, sweet, salty, a bit of spicy all in one bite
The Pork stir fry itself is so simple to make

recipe:
1 medium sized red Onion
3 cloves of Garlic
2 long red Chillies
2stalk of Lemongrass (the middle only)
500g minced Pork
a handful of fresh Mint
a handful of fresh Kesom
a handful of fresh basil
Sesame Oil
finely chop the onion,garlic, chilli and lemongrass
Heat some oil in a wok and fry them until golden brown and fragrant.
Add in the minced pork
Season with salt
Fry until the pork is cooked
Roll up all the herbs into a cigar and roughly chop them.
Stir the herbs and a little Sesame Oil into the stir fry
Dish out onto a plate
Top with more chilli slices.
And serve with cabbage leaves.

Apricot and Yoghurt Muffins

Steph came over tonight so we thought we'd make some muffins =)
Yup, it was last minute, but we still had fun! right steph? hehe
Anyway, these muffins have never failed me once, except for the one time I forgot to add in the yoghurt! haha

anyway, results this time were great! (maybe cos Steph was around??)

HaHAHA I hope she doesn't kill me!


recipe:
125g butter
3/4 cup sugar
dash of vanilla
3 eggs, separated
1 1/2 cups flour
1 teaspoon baking soda
1 cup yoghurt
2 tablespoons orange juice
1/2 cup dried apricots, diced
zest of 1 orange

Oven set to 180C
Sift flour and baking soda
Beat butter and sugar till light and fluffy
Beat in egg Yolks, vanilla and orange zest
Mix in half the yoghurt
Add in half the flour
Add in remaining yoghurt
Add in remaining flour
Whisk whites till soft peeks form
Fold whites into batter
Fold in chopped apricots
Spoon into muffin tin. Bake for 30 minutes.

Apple Crumble


One of The Best desserts ever created, too bad it wasn't me..
Simple, so warm and "homey"
you just can't go wrong
This recipe serves about 4 or 5 people

Again, I'll admit, this is'nt the normal way to make a crumble..but it's just soo much easier??
so a girl's gotta do what a girl's gotta do to get things going =D

recipe:
5 small granny smith apples (mine were quite mini sized)
5 Dried Apricots (sliced)
1/2 cup sugar
1/4 cup water
a dash of vanilla
a pinch of nutmeg
a sprinkle of cinnamon

100g of your favourite biscuit (I used digestives)
50g butter, melted

Heat the sugar, water, vanilla and dried apricots in a pot until the sugar caramelizes a little
Add in the apples, nutmeg and vanilla.
Cook until apples are soft but not mushy
Take off the heat and set aside.

Crush the biscuits into crumbs and chunky bits.
Stir through with melted butter
Toast the crumbs in the oven for about 10 minutes.

Spoon the apples and apricots into a serving dish and top off with the crumble.
Sprinkle with icing sugar.

Meat Bolegnese


I don't know about you, but I think pork is the best meat to make pasta sauce!
Beef can get a little too beefy and chicken's just bland..
This is my take on bolognese, and it's super easy, and you can tell others that you've made it from scratch xP

It's quite rich and heavy, but I believe that's how bolognese should be!
My brother's secret, tossing the pasta with sesame oil and dried basil, may sound strange but it really rocks!
so try it!

recipe:
1 small red onion, diced finely
400g minced pork
a 411g can of diced tomatoes
3/4 cups of canned tomato puree
1/2 cup red wine or burgundy

400g pasta
2 tablespoons of sesame oil
1 tablespoon of dried Basil

Heat a pot and add in 1 tablespoon of olive oil
Add in the onion and cook until its slightly browned
Add in the mince and fry it till its almost cooked and separated
Add in the canned tomatoes, puree and wine
Cover and simmer for about 20 minutes, stirring occasionally

.Boil the pasta until its al dante
Drain it and toss with sesame oil and dried basil.
